All right, so today I have Jasmine Medina on the line, and she works with her mother, Medina, who’s the founder over at Baja tacos fish and , they’re going to her mother and also Jasmine are going to be at the Megamix Expo and the Megamix Expo is, it’s going to be over at the Santa Anita Park in Arcadia, California, March 12th and March 13th.
That’s megamixexpo. com to check it out for tickets and otherwise. First off, Jasmine, welcome, welcome to the show. So nice to meet you. Hi, Adam. Thank you so much for having me. So I understand that your mom’s recipe and the tacos, like, there’s gonna be some good food there. Am I off on this or what?
Like, what should I be expecting? Yeah, of course. I mean, I always believe that mothers always know the best with anything of cooking. she’s my mom and everything, but she cooks amazingly. She’s had her business of seafood for, I would say, over five years now. Yeah. It’s just amazing. She has our specialty are the tacos, the fish tacos and the shrimp tacos, but we also have the ceviches, the fish and the shrimp that goes perfect for the summertime.
It’s nice and cooling. And also she added some new items recently, which is the quesa camaron, which is, I would describe it as shrimp. It’s shrimp with like a quesadilla. So it has shrimp, the cheese and some bell peppers, and it’s all cheesy and good. And finally, the last item she added was a cocktail of shrimp with some octopus and it’s really, really to die for.
Oh man, hold on. So what was it like growing up in house where you had a mom that could cook like that? I’m just curious. Honestly, I was so grateful because I know, I know not a lot of families get to experience at home cooking. So being able to just come home from school or sports, just to like a home cooked meal was always a blessing and I never take it for granted.
Oh, that’s amazing. Did you pick up any of mom’s skills at all? Or were you just spoiled and you’re like, nah, mom has it. No, of course. I, I always love learning new things, especially with cooking. I want to pick it up for later in life or my own life and my own family. So we actually have this tradition where her recipes, she writes them down for me and that book is passed on to me.
That is so amazing. And does she do it in like her handwriting or? Yeah, I think that’s beautiful. Handwriting, handwriting, letters, and penmanship is beautiful, and I get to keep it forever. That’s amazing. What a great story. My mother’s no longer with us, but I recently received a text from one of my cousins and he says, and , it’s a funny story.
So , he sends me this picture of a recipe that my mom wrote for, and it was for her famous Puerto Rican rice. My mother was of Mexican descent, but but she cooked this amazing Puerto Rican food. My dad was Puerto Rican growing up. So we had a lot of. foods. And so he sent me this picture of her Puerto Rican restaurant or her Puerto Rican rice.
And I was just like, no way. I was smiling ear to ear. And I was like, I was like, do you have the original? And they were like, no, all we have is this picture. So then he tells them, he says, hey, go to my goat when he goes to visit his mom, who sent him the picture, my aunt Carmen. He asked her, he says, Hey, he asked his mom, he says, Hey, do you have the original, that piece of paper, like from when, from my mother’s name was Grace, from when Grace came over and cooked and she, you know, she gave you the recipe and all that.
and his mom, my aunt Carmen was like, no, all I got was this. And , , she sends a picture. my mom burnt her counter. It was like this big black mark on her counter. Oh my gosh. I was dying. I love that though. So you’ll cherish those, recipes. That’s absolutely amazing.
And what a great family tradition and what a great thing to hand down to you know, to the next generation, your mom’s recipes that she puts her work into what’s one a year. Cause I’m going to be there. I’m going to be at the mega mix expo and for everybody listening, we definitely want you to come out and visit and come try these tacos too.
Again, it’s going to be an and you go to Megan, exactly. Dot com and you’ll see all the information. But what’s one of your favorite dishes that your mom makes that’s gonna be at the expo? What, what should I be trying, what’s the, what’s the goat? I would say, what’s the goat? It’s like, oh, you gotta have this, Adam.
What’s the one? . Let’s see, Adam. Honestly, Adam, you should try everything but, oh, come on. My stomach. I don’t have, I’m not a cow. I only got one stomach. Come on. How do I do this? Come on. No, you should definitely try. I would say my, top two favorites. I would say are the fish tacos and the fish ceviche. The fish ceviche I love because it has, it’s cooked in lime juice, the fish.
I’m a big fan of ceviche by the way, tell me more, I’m a big fan of ceviche. Yeah, so our ceviche, it’s cooked in the lime juice natural lime, and It’s just so good. It gives it that like lemony taste that it’s not too lemony where it’s like, oh, it’s sour, but it’s like the perfect balance along with the, cilantro and the tomato and the onion.
It’s just, and with some hot sauce, we have all the hot sauces available and it’s just your own perfect combo. That sounds amazing. All right. So I already know what I’m getting. This expo isn’t even until March. And I already know what I’m eating that day. I need the ceviche. I need some fish tacos.
I’m gonna be sitting in my booth. You know, , not doing work. Like I should be, I’m going to be sitting there with a taco. Exactly. That’s, that’s lovely. No, I love, I love always, I love. Serving people. I think that’s something I’ve picked up when helping my mom, sir. Well, anything in the food business, you have to be very service friendly and that’s helped me branch out more, open up more and just handling customers.
it’s honestly like a joy. I learned something new about people every single day and everyone, has like their own, their own struggles. And sometimes they confide in us. And that’s like beautiful to me that food really brings communities, people together in like a short amount of time.
Amazing. Jasmine, how do our listeners learn more about, your mom’s business? And and how do they connect? How do they book the truck? Like how, how do they do business with them? Baja tacos fish. Yeah, so my mom is I’m on business and she does catering services right now We don’t we’re saving up for food trucks.
That is our dream Well, the bigger dream would be to own our rest our own restaurant, but yeah small steps at a time but she has their catering business At the expo, there’s going to be our business cards, any other information they would like to ask we cater events, we also make like, I want to describe it as like, if you don’t want to order the full catering service, you can also order like trays of food and we bring them to your house so you can set it up however you would like, but typically it’s whatever the customer wants, we just want people to try our food because we know people will like it.
